Rustic Apple Pie

No crimping is required for this pie; simply pile the fruit into the crust, spread slightly and then fold the border in. And, if you make the crust ahead of time, this recipe is as easy as...well, you know.

Jonagold, Ida Red, or Golden Delicious apples
Granny Smith Apples
1 tbsp. all-purpose flour
1 tsp. orange zest
1/4 tsp. ground cinnamon
freshly grated or ground nutmeg
3 tbsp. sugar
- Heat oven to 375 degrees F. Working on a piece of parchment paper, place on disk of dough on top of the other and roll the dough together into a 15-inch Circle. Slide the paper (and crust) onto a baking sheet.
- In a large bowl, toss the apples, flour, zest, cinnamon, nutmeg and 2 tablespoons sugar. Pile the apples on top of the crust, leaving a 3-inch border. Fold the border over the apples.
- Brush the crust with the egg. Sprinkle the entire pie with the remaining tablespoon sugar and bake until the crust is golden brown and the apples are tender, 55 to 65 minutes. Let stand for at least 30 minutes before serving. Serve warm or at room temperature.
